Stakeholders collaborate in sewer blockage guide for hospitality sector
An independent and authoritative guide on the management of Fat, Oil and Grease (FOG) in foodservice establishments was published last week to support the hospitality sector to prevent causing sewer blockages.
The guide was developed by a coalition under the banner of FOGwise, chaired by chaired by director of Policy Consulting Network, Phill Mills. The group included representatives from Southern Water (representing Water UK’s Network Protection group), the Foodservice Equipment Association, Foodservice Consultant Society International, the National Federation of Fish Fryers (NAFF) and British Water.
